Restaurant La Cabro d’Or Baumanière, Les Baux-de-Provence
What a great pre-birthday celebration I had! My friends Walter and JaNahn treated us to lunch at Cabro d’Or, the sister restaurant to the famous Oustau de Baumaniere. I have to admit that as I age I am less impressed with fancy restaurants and much prefer simpler fare. From whatever standpoint of dining you find yourself — Call this either my evolution or de-evolution from my formative days as a Chef.
Chef Michel Hulin made me a firm believer in reimagined fare again. While we were deciding which dishes to eat, we nibbled on a few amuses. All the beautiful Provencal flavors that I adore; super creamy warm panisses, local olives, and a little cup of anchoiade served with tiny radishes. My son Beau was nose-deep into the anchoiade and certainly not in the sharing mood when I suggested that he should hand it over to me. The bottle of privately labeled brut rose cuvee Baumaniere tasted fantastic, but when does Champagne not go well with something?
